Pumpkin Pancakes for Thanksgiving Day AND Halloween?

pancakes I'm on a hunt for canned pumpkin and I'll tell you why. As much as I'd like to have a real pumpkin to stick in front of my house for Halloween and just use the innards for making whatever, I haven't seen a pumpkin anywhere around Olongapo City. I'll bet my wife could find one, but unfortunately, she won't be back until AFTER Halloween.

Pumpkin Pancakes

From what I understand, you can get pumpkin pancakes at IHOP every year as a seasonal kind of thing. It's probably for the Thanksgiving season, but I wouldn't know. I always spent the holidays eating home cooked food.

Regardless of all that, I'd be eating pumpkin pancakes for Halloween as well as Thanksgiving Day if I could just find an actual pumpkin. Nevertheless…

Pumpkin Pancake Recipe

I stumbled across a pumpkin pancake recipe and saved it to a text file a couple of days ago. It's supposedly a recipe for duplicating the IHOP pumpkin pancakes. Since I was getting ready to sleep at the time, I promptly forgot about it (and didn't remember when I woke up) until I was looking for something else an hour or so ago. I'm not going to repeat the cooking directions (heck, I didn't even bother to save that part since you make them with this recipe just as you would with any pancake recipe). What's important are the INGREDIENTS:

  • 2 eggs
  • 1 1/4 cups buttermilk
  • 4 tablespoons melted butter
  • 3 tablespoons canned pumpkin
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon allspice

I already have most of the ingredients. I know where to get all the rest, except for the canned pumpkin (and maybe the allspice, but I could wing it with that one). If I find it, I'll be getting more than I need just for pumpkin pancakes. I'm salivating right now for the taste of pumpkin pie, something I haven't had in more than three years.

    OMG, this is an ideal recipe for halloween this year. And it looks easy enough that not only I can do it, but I think my kids would love to help as well. We can make it a family event :)
